What is Berber pizza (Madfouna)?

Madfouna is the Tafilalet’s stuffed flatbread, baked with spiced meat, onions, almonds and herbs — order it a few hours ahead.

It is a celebration dish, traditionally baked in sand or clay ovens and shared from the middle of the table. Several Merzouga and Hassi Labied kitchens make excellent versions — ask us to order one for your arrival.
